October is finally here! As I mentioned in the last monthly blog, I'm not a pumpkin-spicer, but October and November are definitely my favorite months of the year! Take a look below at what's going on this month. There are some great events coming soon and I've included two recipes that I, for one, can't wait to try. Also, a DIY section for some pumpkin (but not so spicy) ideas to have your home ready for Halloween and Thanksgiving!
Parc Gardens, Lafayette’s First 55+ Luxury Apartments & Condos

SAUSAGE TACO CAULIFLOWER RICE SKILLET
-1 lb (450g) ground Italian sausage
-1 tablespoon butter
-1/3 cup diced red onion
-1/3 cup diced green pepper (or Jalapeño)
-3 garlic cloves, minced
-1 medium can diced tomatoes or 3 tomatoes, seeded and diced
-1 12 oz bag steamed riced cauliflower (or 1 head cauliflower, riced)
-2 tablespoons homemade taco seasoning or taco seasoning packet
-3/4 cup chicken broth
-1 1/2 cups cheddar cheese or mozzarella
-1/2 cup Monterrey jack cheese
-Chopped fresh cilantro, for topping
-In a cast iron skillet, melt butter; add the sausage and cook over medium-high heat until cooked through, breaking up the sausage with a wooden spoon. Stir the red onion, pepper, and garlic into the meat and sauté for one minute, until fragrant.
-Steam the riced cauliflower in the microwave according to package directions.
-Add homemade taco seasoning, diced tomatoes, chicken broth, and cauliflower rice to the skillet. Stir well to combine then cook on medium-low heat for 5-7 minutes until extra liquid is absorbed. If the mixture gets too thick to your taste, add a little more chicken broth.
-Simmer on low covered for 5 minutes. Adjust seasoning with salt and pepper if needed.
-Sprinkle shredded cheese on top, cover and simmer until cheese is melted. Garnish with fresh chopped cilantro and serve immediately. Enjoy!
Note: You can also garnish with jalapeños, lime slices etc…

Apple Cider Cupcakes & Brown Sugar Cinnamon Buttercream
Prep time: 30 mins
Cook time: 17 mins
Total time: 47 mins
-1⅔ cup all purpose flour
-1 cup apple cider
-⅔ cup sugar
-½ cup unsalted butter, softened
-2 tsp. baking powder
-1 tsp. ground cinnamon
-½ tsp. salt
-1 tsp. vanilla
-1 cup softened butter
-3 cup powdered sugar
-½ cup light brown sugar
-1 tsp cinnamon
-2 tbsp milk
-1 tsp vanilla
-Cream together butter and sugar in the bowl of a stand mixer (or using a hand mixer). Add the eggs and vanilla and mix until fully incorporated.
-Whisk together all of the dry ingredients in a separate bowl. Add the apple cider and the mixture of dry ingredients, alternating between the two, slowly incorporating them into the butter/sugar/egg mixture.
Line standard muffin/cupcake tin with paper or foil liners.
-Fill cupcake liners ⅔ full and bake at 350º for 17-19 minutes. Bake until toothpick or skewer inserted into center comes out clean. Let cool completely before frosting.
-Whip butter, brown sugar, cinnamon and vanilla together with a mixer until light and fluffy.
-Gradually add powdered sugar and mix until incorporated.
-Add milk until you reach desired consistency (more for thinner frosting).
-Transfer to piping bag and frost each cupcake once they have cooled.
-Garnish with an apple slice, if desired.
Cupcakes stay fresh at room temperature in an airtight container for 5 days. Enjoy!

This month's DIY Corner is all about Pumpkin Spice!!!!! Just joking! (By the time we are done with this year, you should all be well aware on where I stand regarding pumpkin spice. Ha!)
